According to Harold Simpson, A Century of Ballads, 1810-1910, Mills & Boon, 1910, pp. 293-294, "The Wind That Shakes the Barley" was set to music by composer Herbert Bunning. But it seems to me that I have encountered two tunes for this, and I do not know which is Bunning's.
"The Wind That Shakes the Corn" appears to be a modern adaptation of this rebel song, though I can't prove this. - RBW
